Roasted Pepper and Tomato Dip

This dip is my twist on a Moroccan Taktouka.There are some dishes that just feel like comfort — the kind that fill your kitchen with the smell of roasted peppers and slow-simmered tomatoes, making you want to grab a warm piece of bread and dig right in. For me, Taktouka — a classic Moroccan dish made from roasted peppers and tomatoes — is exactly that. I couldn’t resist putting my own little spin on it.

This version keeps the soul of traditional Taktouka — smoky, garlicky, and rich with spices — but adds a few subtle tweaks. The result is a dish that’s rustic yet vibrant, perfect with grilled meats, spooned over your favorite grain or simply served with crusty bread or pita. Like most Moroccan dishes, Taktouka is traditionally served with bread. The purpose of the bread is to soak up the delicious sauce. It can be served either warm or at room temperature. Enjoy!

Ingredients:

  • 2 green bell peppers
  • 1 red bell pepper
  • 1 head of garlic
  • 1 28 ounce can of San Marzano peeled tomatoes
  • 2 Tbsp olive oil
  • 1 Tsp sugar
  • 1 Tsp cumin
  • 1 Tsp ground coriander
  • 1 Tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp cracked black pepper
  • 1/4 tsp cinnamon
  • 2 Tsp salt

    Directions :
  • Preheat your oven to 425°F (220°C). Place the green and red peppers on a baking sheet
  • Cut the top off of the garlic, leaving it whole, drizzle with olive oil and wrap tightly in foil and add to the baking sheet
  • Roast until the skins are blistered and charred, about 25–30 minutes and garlic is golden brown
  • Transfer the peppers to a bowl, cover with a plate, and let them steam for 15 minutes — this makes peeling easier. Peel off the skins and remove the seeds. Cut peppers into long strips
  • In a deep pan or Dutch oven, heat 1 tbsp olive oil, peppers and tomatoes with the liquid
  • Squeeze in the roasted garlic. Add in all the spices
  • Bring the mixture to a boil, reduce heat to low and cook covered for 40 minutes. Stir after 20 minutes and add 1/4 cup of water if it looks too thick
  • Remove lid and continue cooking for 15 minutes
  • Adjust seasoning to your taste, transfer to bowl and let cool.
