Watermelon Mojito

The kids are back in school, but it is still incredibly hot here in Texas. There is nothing better then a cold, refreshing cocktail to beat the heat. You can easily leave out the rum and make it non alcoholic. These mojitos are easy to make but look incredibly fancy and delicious. The drink will taste best if the watermelon juice has time to chill in the refrigerator for a little bit. Cheers!
