Ingredients:

  • 1 bulb of garlic
  • 1/2 cup sour cream
  • 1 cup plain Greek yoghurt
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tsp Salt
  • 1/2 tsp freshly grated black Pepper
  • 1 tbsp Italian seasoning

Directions:

  • Roast the Garlic: Preheat your oven to 400°F
  • Remove and discard the papery outer layer of each head of garlic, making sure you leave the inner skin,so that the head stays intact
  • Slice off the top of the garlic bulb to expose the cloves, drizzle with olive oil, and wrap the bulb in aluminum foil. Place it in the oven and roast for 35-40 minutes, or until the garlic is soft and golden brown. Once roasted, allow it to cool for a few minutes, then squeeze out the soft garlic from the cloves and set aside.
  • Place garlic cloves into a medium bowl and mash with a fork until smooth. Add sour cream, yoghurt, lemon juice, Italian seasoning, salt, pepper and Parmesan cheese
  • Stir until well combined. Cover and refrigerate for at least 1 hour, so that the flavors meld together
  • Serve the dip with your favorite chips, crackers, pretzels,veggies (carrots, celery, and cucumber work great), or warm pita bread. You can also drizzle it over roasted potatoes or use it as a spread for sandwiches and wraps
