Double Chocolate Cookies

There are few things more comforting then the smell of freshly baked cookies wafting through the house, and when those cookies are double chocolate it takes it to the next level. Soft, rich, gooey with a hint of salt, these are packed with deep chocolate flavor and are the perfect balance of sweet and decadent. If you are a chocolate lover, then you will absolutely love these cookies. They are super easy to make, so with just a few pantry staples you can whip up a batch whenever you need to. I like to use different sizes of chocolate chips for texture, but you can go ahead and use any kind of chocolate chips that you like. Enjoy!

Ingredients:

  • 1/2 cup unsalted butter, room temperature
  • 3/4 cups brown sugar
  • 2 1/2 tbsp granulated sugar
  • 2 1/2 tsp vanilla extract
  • 1 egg
  • 1 1/4 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup mini semi sweet chocolate chips
  • 1/2 cup regular semi sweet chocolate chips

Directions:

  • Preheat oven to 350F and line a baking sheet with parchment paper
  • Cream together butter and both sugars until smooth and creamy
  • Add vanilla and egg, mix until combined
  • Add salt, flour, cocoa powder and baking soda
  • Mix just until combined
  • Using a spatula, fold in the chocolate chips until evenly distributed throughout the batter
  • Using a small cookie scoop, scoop batter on to baking sheet and gently press the batter down to flatten to about 2/3 inch thickness
  • Bake for 8-10 minutes
  • Remove and let cool on baking sheet for 10 minutes
