Fruit on a salad seems to scream warm weather is here! Light and fresh, this salad is perfect on its own, or topped with any grilled protein. This salad is great to serve as a lighter side during BBQ season and is definitely a crowd pleaser. If you don’t have pine nuts, feel free to use candied pecans or slivered almonds instead. You can also omit the nuts altogether, but I like the slight crunch that they give to the salad. Enjoy!
Ingredients:
- 4 cups arugula
- 1 cup stemmed and sliced strawberries
- 1/2 cup feta cheese
- 2 tbsp toasted pine nuts
- 1/4 cup finely chopped basil
- 2 1/2 tbsp lime juice
- 2 tbsp honey
- 1 1/2 tbsp dijon mustard
- 4 tbsp avocado oil
- 1/4 tsp salt
- 1/8 tsp black pepper
Directions:
- Add arugula, strawberries, basil and feta cheese to a large bowl
- Place the pine nuts in a small, dry skillet and toast over medium high heat, shaking and stirring continuously for 3-4 minutes. Remove from heat and add to salad
- In a separate bowl, whisk together lime juice, honey, mustard, oil, salt and pepper until completely combined
- Pour dressing over the salad and toss gently
- Top with a freshly cracked black pepper if desired
- Enjoy!
