This salad is both easy and delicious. I personally like to add some chopped cilantro and feta cheese to it, but my kids prefer it as is. It takes 5 minutes to prepare, making it a great meal when you don’t have time to cook.
Ingredients:
- 1 can drained corn kernels
- 1 cup cooked shelled edamame
- 1 large avocado cubed
- 1 cup cherry tomatoes, cut in half
- 2 tbsp seasoned ricewine vinegar
- 1 tbsp grape seed oil
- salt and pepper to taste
Directions:
- Add corn, edamame, avocados and tomatoes to bowl
- In a separate bowl mix together vinegar and oil, add salt and pepper to taste
- Pour dressing over salad and toss gently
