Edemame & Corn Summer Salad

This salad is both easy and delicious. I personally like to add some chopped cilantro and feta cheese to it, but my kids prefer it as is. It takes 5 minutes to prepare, making it a great meal when you don’t have time to cook.


  • 1 can drained corn kernels
  • 1 cup cooked shelled edamame
  • 1 large avocado cubed
  • 1 cup cherry tomatoes, cut in half
  • 2 tbsp seasoned ricewine vinegar
  • 1 tbsp grape seed oil
  • salt and pepper to taste


  • Add corn, edamame, avocados and tomatoes to bowl
  • In a separate bowl mix together vinegar and oil, add salt and pepper to taste
  • Pour dressing over salad and toss gently
