Peanut Noodles

If you are looking for a quick and simple recipe that is packed full of flavor, look no further. I like to make these noodles as a side when guests come over, and there has never been a single noodle left in the bowl. This is most definitely a crowd pleaser, as well as a quick dish to whip on on a weeknight. It is full of flavor and only takes 10 minutes to prepare. These noodles pair beautifully with any type of protein or perfect on its own. These noodles are best served warm or at room temperature. Enjoy!

Ingredients:

  • 4 packages (7 oz each) cooked udon noodles
  • 1 cup finely chopped green onions
  • 1/2 cup finely chopped cilantro
  • 1 tbsp minced ginger
  • 1/2 cup peanut butter
  • 2 tbsp seasoned rice wine vinegar
  • 3 tbsp orange juice
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp sesame oil
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp red pepper flakes
  • 1/2 tsp honey

Directions:

  • Prepare noodles according to package directions, drain and set aside (I usually boil them for 2-3 minutes)
  • While the noodles are cooking, whisk together peanut butter, ginger, rice wine vinegar, orange juice, soy sauce, oyster sauce, honey, black pepper and red pepper flakes until fully combined and smooth
  • Mix the noodles with the peanut dressing while the noodles are still warm
  • Add the green onions and cilantro, mix well
  • Serve warm or at room temperature
  • Enjoy!
