I prefer to serve it warm, but it also tastes great at room temperature. It is a great way to incorporate summer vegetables into your meal. This salad is a perfect addition to any BBQ, as it goes great with meat, poultry and fish. Ingredients:
- 2 large zucchinis chopped
- 2 cups of cooked corn
- 1/2 tsp dry oregano
- 1/2 tsp dry basil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp olive oil
- 1/4 cup chopped parsley
- 1/4 cup crumbled feta cheese
Directions:
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add zucchinis, corn, oregano, basil, garlic powder, salt and pepper. Cook 6-8 minutes, stirring frequently.
- Remove from heat and transfer to a serving dish. Top with chopped cilantro and crumbled feta cheese. Enjoy!
