Everyone has a box of their favorite pancake mix in their pantry. It is easy and quick, which is why people tend to use that instead of making their own pancake batter. What people don’t necessarily know, is how easy it is to make a fluffy, golden, restaurant quality pancake. These buttermilk pancakes are super easy to make and come out perfect every single time. It is definitely worth the few extra minutes it takes to make fluffy, thick and delicious pancakes, completely from scratch. Enjoy!
Ingredients:
- 2 cups all purpose flour
- 1/4 cup sugar
- 2 cups buttermilk
- 1 tsp vanilla
- 1/4 cup melted butter
- 2 eggs
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1/4 tsp salt
- Extra butter to grease the pan
Directions:
- Melt the butter and set aside so it cools a little while preparing the rest of the batter
- In a large bowl, mix together flour, sugar, salt, baking powder and baking soda
- In a separate bowl, mix together melted butter, buttermilk, vanilla and eggs
- Add the wet ingredients to the dry ingredients until combined, but do not overmix. Batter should be thick and lumpy
- Heat a buttered pan over medium heat
- Add the batter in large heaping spoonfuls. They will not be perfectly round because it is a thick batter
- Flip once batter starts to bubble and lightly browned on the first side, about 2-3 minutes
- Flip again and lightly brown the other side
- Serve with maple syrup and berries
