Orzo Salad

If you are looking for something quick and delicious, then this orzo salad is for you. It is perfect all year round, It is fresh and light, great as a side with any protein or as a meal on its own. Feel free to add more cranberries and feta if you prefer.

Ingredients:

  • 1 cup orzo
  • 1/2 cup chopped cilantro + 1 tbsp for serving
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup dry cranberries
  • 1/4 cup crumbled feta cheese
  • 1/2 cup lemon juice
  • 1 tsp salt
  • 1/2 tsp cracked black pepper
  • 2 tbsp honey
  • 4 tbsp olive oil

Directions:

  • Bring a pot of boiling salted water to boil and cook orzo according to package directions until al dente (9-10 minutes) Drain and rinse with cold water
  • While orzo is cooking , mix together lemon juice, honey, salt, pepper and olive oil and set aside
  • In a large bowl combine red peppers, cilantro, cranberries, feta and orzo
  • Toss with dressing until well combined
  • Cover and refrigerate for at least 2 hours
  • Toss before serving and sprinkle with cilantro
  • Enjoy!
