Living in Texas, salsa is always a must. This holiday version is fresh and delicious. It can be served with crackers or tortilla chips as an appetizer or right along with the turkey as part of the main meal. I like to serve it as is, but it is also delicious served over a block of cream cheese and crackers. It goes very well with most proteins, such as poultry, beef or pork. It is best to let it sit covered in the refrigerator for a little while before serving, so that the flavors can blend. Enjoy!
Ingredients:
- 1 1/2 cups fresh cranberries
- 1 jalapeno, seeded and coarsely chopped ( feel free to leave the seeds if you like a little more spice)
- 1/2 an apple, peeled and chopped
- 1/2 cup chopped cilantro
- 1/2 cup chopped green onions
- 3 tbsp lime juice
- 1/4 cup + 1 tsp sugar
- 1/4 tsp salt
- 1/2 tsp pepper
Directions:
- Place all ingredients in a food processor and pulse until you reach desired consistency
- Refrigerate (at least 2 hours) until ready to serve
- Taste and adjust sugar, salt and pepper to your preference, as the flavor will change after its sits for a few hours in the refrigerator
