If you are craving a cocktail that is the perfect combination of sweet and spicy, then this one’s for you. This pineapple martini is simple to make, fresh, delicious and the perfect summer drink! I love the flavor of jalapenos but don’t want too much heat, so I remove the seeds. If you prefer more of a kick then add the seeds. The longer you let it sit, the stronger the taste. This is a party hit and will keep your guests asking for more until the last slurp. This recipe makes 2 cocktails. Enjoy!
Ingredients:
- 6 ounces vodka
- 1/2 jalapeño, sliced, seeds removed
- 1 1/2 ounces simple syrup
- 4 ounces pineapple juice
- 8-10 mint leaves
Simple Syrup:
- 1 cup sugar
- 1 cup water
Directions:
- The first step is to make the jalapeno infused vodka. Pour 6oz of vodka into a tall container and add sliced jalapeno (with or without seeds)
- Let sit for a minimum of 45 minutes and up to 6 hours
- Once you have reached your desired heat and flavor, strain the vodka and remove jalapenos
- If making your own simple syrup:
- Combine the water and sugar in a small saucepan over medium-high heat and bring to a boil Stir until the sugar has dissolved, then remove from heat
- Once syrup is cool, pour it into a clean glass jar. Seal tightly and store in the refrigerator for up to 1 month
- Add vodka to a cocktail shaker, along with the syrup, juice and mint
- Fill shaker with ice and shake vigorously
- Strain into martini glasses
- Garnish with fresh mint, pineapple slice and sliced lime
