Watermelon Mojito

The kids are back in school,but it is still incredibly hot here in Texas. There is nothing better then a cold, refreshing cocktail to beat the heat. You can easily leave out the rum and make it non alcoholic. These mojitos are easy to make but look incredibly fancy and delicious. The drink will taste best if the watermelon juice has time to chill in the refrigerator for a little bit. Cheers!

Ingredients:

  • 4 cups watermelon chunks
  • 12 mint leaves, extra for serving
  • 3 oz rum
  • 4 tsp agave or simple syrup
  • 1 tsp freshly squeezed lime juice
  • a splash of sparkling water

Directions:

  • Place watermelon cubes in a blender. Blend on high speed, until smooth
  • Strain watermelon mixture through a fine mesh sieve and pour juice into a pitcher for easy pouring
  • Take 2 tall glasses and place 6 leaves of mint, 2 tsp agave syrup and 1/2 tsp lime juice in each
  • Muddle together (using a muddler or back of a wooden spoon press down and twist 3-5 times)
  • Add ice halfway up the glass
  • Add rum and watermelon juice
  • Top each drink with a splash of sparkling water
  • Garnish with mint springs and sliced watermelon
  • Enjoy!
