If you are looking for something quick and delicious, then this orzo salad is for you. It is perfect to make year- round. Full of flavor, fresh and light, it is great as a side with any protein or as a meal on its own. Feel free to add more cranberries and feta if you prefer. This is a great dish to make ahead because the longer the salad sits, the more the flavors meld together. Enjoy!
Ingredients:
- 1 cup orzo
- 1/2 cup chopped cilantro + 1 tbsp for serving
- 1/2 cup finely chopped red bell pepper
- 1/2 cup dry cranberries
- 1/2 cup crumbled feta cheese
- 1/3 cup lemon juice
- 1 tsp salt
- 1/2 tsp cracked black pepper
- 1 tbsp honey
- 4 tbsp olive oil
Directions:
- Bring a pot of boiling salted water to boil and cook orzo according to package directions until al dente (9-10 minutes) Drain and rinse with cold water
- While orzo is cooking , mix together lemon juice, honey, salt, pepper and olive oil and set aside
- In a large bowl combine red peppers, cilantro, cranberries, feta and orzo
- Toss with dressing until well combined
- Cover and refrigerate for at least 2 hours
- Toss before serving and sprinkle with cilantro
