Maple Bourbon Bacon Wrapped Apricot Jalapeno Bites

These little bites are packed with flavor. The sweet apricot pairs beautifully with the salty bacon, and the touch of heat from the jalapeno is an unexpected surprise. You can serve them without the glaze, but I love the maple bourbon taste, as well as the shiny finish that the glaze gives the bites. This is the perfect appetizer for any gathering, especially during the holiday season. They are quick and easy to prepare. They are always a hit. This recipe makes 12 bites, but can easily be doubled. Enjoy!

Ingredients:

  • 4-5 slices bacon
  • 12 dried apricots
  • 1-2 jalapenos
  • 1 tbsp maple syrup
  • 1 tbsp bourbon

Directions:

  • Preheat oven to 400F and line a baking sheet with aluminum foil or a silpat
  • Cut the apricot slices down the middle, leaving them attached, like a book
  • Cut the jalapeno in half and remove the seeds
  • Slice jalapeno into slices that will fit inside the apricots
  • place 1 slice of jalapeno inside each apricot
  • Cut each slice of bacon so that you have enough to wrap the apricot with some overlap, as bacon will shrink when cooked
  • Wrap each stuffed apricot in the bacon and secure with a toothpick
  • Place on baking sheet and bake for 15-20 minutes, until bacon is golden brown
  • Pour the maple syrup and bourbon into a microwaveable bowl or a small saucepan
  • Heat the maple syrup and bourbon in the microwave for 20 seconds or on the stove until hot
  • Brush the bacon with the glaze as soon as they come out of the oven
  • Transfer to serving dish and serve warm
