Blueberry Banana Loaf

Blueberry Banana loaf makes a great breakfast, midday snack or dessert. It is packed full of blueberries and bananas, and is incredibly easy and quick to make. This is a great recipe when you are craving something sweet, but not too sweet. I like to make it with fresh blueberries, especially in the summer months. Feel free to make it with frozen berries if you prefer. Make sure that you thaw the blueberries and pat them dry, as they will give too much liquid to the batter.

Ingredients:

  • 2 cups unbleached all-purpose flour
  • 3/4 cup sugar
  • 1 tbsp honey
  • 2 ripe bananas, mashed
  • 1/2 tsp cinnamon
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup yoghurt ( plain or vanilla)
  • 2 eggs
  • 1 cup blueberries
  • 1 tbsp vanilla extract
  • 1/4 cup + 2 tbsp grape seed or canola oil

 

Directions:

  • Preheat oven to 350F and grease a loaf pan
  • In a bowl, mix together flour, sugar, salt, cinnamon and baking soda
  • In another bowl, mix together mashed bananas, yoghurt, eggs, oil, vanilla and honey
  • Stir the dry ingredients into the wet ingredients until just combined but do not over mix
  • Gently stir in the blueberries, carefully as not to break them
  • Pour batter into greased loaf pan and bake for 50-60 min, until a toothpick inserted in the centre comes out dry
